Samia Ahad, local celebrity Chef and culinary director of the Coriander Leaf Group introduces her latest venture to you. A novel five format menu available throughout Screening Room.
The Screening Room menu has something for everyone. Whether you want an inexpensive snack with drinks at the bar, a casual steak dinner or a more formal four-course menu paired with wines, it’s all here the way you want it. While offering you a range of menu options, we are committed to the highest quality in ingredients and the careful crafting of each dish.
Bites
The Bites menu is for people who want a light something to nibble while enjoying a drink. Or something more substantial as a light meal with drinks at the Rooftop Bar. From herbed popcorn cooked in olive oil to great Middle-Eastern olives to Tapas-like Bruschetta as light nibbles to more substantial items such as Chicken Patties and Lamb Kebabs. We also have introduced our specialty platters, allowing guests to take a culinary journey through Asia-be it from the Indian Subcontinent to Indochina whilst enjoying a sampler of light bites.
Our menu also features the best burger in town. We make ours with 300-day grain-fed minced Australian Wagyu beef with a super high 9-BLM marbling rating. For those who want something different we also offer a tandoori chicken burger with tomato cucumber yogurt relish and mint chutney. Our flavorful Wagyu Burger made with choice Australian beef and seasoned with Indian spices is also one of our specialties.
Steaks
At The Screening Room we serve fine New York style steaks, with soft centers and charred outsides. Four different cuts are offered to be cooked to your preference. Condiments range from traditional steak sauces to Japanese yuzukosho and shoyu, our housemade tomato chutney and housemade sesame-soy dressing. Our sides range from classic fries to vegetables with a delightful Asian twist.
First and Mains
Modern Asian cuisine is informed by the highly developed cuisines of Europe (largely French and Italian), the Middle East (Persia and Iran), Sub-Continental (India and Pakistan), South East Asia (Thailand, Vietnam and Malaysia) and Far East Asia (China and Japan) cuisines. At Screening Room we do not place one ethnic dish next to another. Instead, all of the dishes here are developed originally with cultural references from one or more of these world cuisines. Just as vocabulary changes language, ingredients change cuisines … “
From the gastronomic menu, you can sample Samia's signature dishes which include the rack of lamb with a tamarind and coriander seed crust or the barbequed chicken with walnut and mint marinade.
Modern cooking techniques have revolutionized the way we eat. For our fish and meats, we use slow-cooking methods such as low-temperature oven roasting in combination with steam and sous-vide in order to produce previously unattainable silken textures.
Modern desserts are light but yet satisfying. Careful portioning enables you to enjoy the intensity of flavors of a rich chocolate or prune confection without weighing you down.
Cheese
Our cheeses come directly from their producers in France. In fact, we only choose the best cellar-ripened cheeses that are made from raw, unpasteurized milk for peak flavor and unmatched richness. It has been shown that people who are lactose intolerant can eat raw milk cheeses with no ill effects.
European-style breads don’t keep well in hot, humid climates such as Singapore. A better choice are the Middle Eastern and Indian flatbreads historically developed in similar climates. Freshly made naan baked to order in our Tandoor oven makes a surprisingly satisfying accompaniment to our French cheeses. |
Screening Room’s strap line and concept “where food meets film” comes to life through its special food and film paired events and menus. Come and watch the award winning classic The Godfather after enjoying a special menu in the restaurant inspired by the film – of course you can expect Cannolis for dessert (from the quote “Leave the gun, take the cannolis”). Or experience one of the food scenes from Monsoon Wedding……..or why not order a “martini, shaken not stirred”. |
